Hi, my Uromastyx isn't eating at all since I got him, I've offered green leaf lettuce, Romaine, and Mustard Greens so far with no luck. It's only been a few days since I got him though so I'm thinking he's just still getting used to things. But I'm really not sure how often to feed them or how long they can go without eating. Any thoughts?

Check the temps. You should be opting for a general upper 70s-lower 80s ambient temperature with basking spots (actual basking surface temps) of 120-130'F.

Plenty of hides?

Got UV lighting?

Uros can be very touchy when moved to a new environment. Offer food daily. Like stated above, lots of hides. Do you have him set up in a glass aquarium? If so, is he in a very busy area? You may need to cover some of the sides to cut down on the stimuli.
